Joe & the Juice was one of the original tenants when One Paseo opened in 2019. In June 2026 the Copenhagen chain opened again on the other side of the street, on the upper level of Del Mar Highlands Town Center. In the months since, the two centers facing each other across Del Mar Heights Road have each added things the other doesn't have. One Paseo got a brand's first sit-down restaurant and a Nordstrom service hub. Del Mar Highlands added seafood, a cocktail bar, a yoga studio and a sauna on its upper decks.
Taken together, the summer's openings give each side of the road its own job. Halloween weekend shows it plainly. One Paseo's party is Friday afternoon and Del Mar Highlands' is Saturday, so a family can do both without the schedules overlapping.
The juice bar that crossed the road
The details of the Joe & the Juice move are worth a look. The new shop is at 3435 Del Mar Heights Road, No. 9, behind frosted pink windows. Inside are dark woods, a bar, booths and stacks of coffee table books. The Union-Tribune counts it as the third Joe in San Diego. The company has more than 500 stores worldwide, and 23 of them are in California. The menu matches what One Paseo regulars remember. There are pressed sandwiches like the Tunacado and the Spicy Caesar, and the Hydration Station juice is made with coconut water, spinach, ginger and olive oil.
The same Union-Tribune roundup listed a group of other new Del Mar Highlands tenants. L&L Hawaiian Barbecue held a luau-themed grand opening next to Ike's Love and Sandwiches. Perspire Sauna Studio and CorePower Yoga had arrived on the fitness side. Lobster Lab, Seabørn Cocktails and Wanderlust Creamery were still on the way. That one paragraph covers most of what changed at Del Mar Highlands this year. Most of it went upstairs.
Del Mar Highlands is building upward
The newest Del Mar Highlands tenants are on the upper decks above the parking lot and the Pop Jet fountain.
Lobster Lab is open on the Sky Deck. The center's directory marked it "Now Open" in mid-August. According to the restaurant's own site, hours are 11 a.m. to 9 p.m. Sunday through Thursday and 11 a.m. to 10 p.m. on Friday and Saturday. Before that, it was reported as an expansion that would open in the second week of July.
CorePower Yoga officially opened on Tuesday, June 9, at 12853 El Camino Real, Suite 209, and held a grand-opening weekend June 13 and 14. Perspire Sauna Studio is in the same building, in Suite 202. The center's listing image now reads "Now Open."
Over on the Brewer's Deck, Seabørn Cocktails is moving into the old Boochcraft taproom at 12841 El Camino Real, Suite 302. Once it opens, the upper level will have dinner on one deck and cocktails on another, with yoga and sauna sessions in the building beside them.

One Paseo picked up a first and a shortcut
The new One Paseo tenants this summer are built around eating well and getting errands done quickly.
Goop Kitchen opened August 31 at 3745 Paseo Place, in the space Tender Greens used to occupy. Gwyneth Paltrow's food brand has run Goop Kitchens since 2021. There are 16 in California and three in New York, and until now every one of them was delivery and takeout only. The Carmel Valley location is the brand's first dine-in restaurant anywhere. The whole menu is gluten-free and made without seed oils, refined sugars or corn. It covers salads, bowls, wraps, soups, pasta and nine pizzas. One of them is a pepperoni pie named Pepperoni Potts, after Paltrow's character in "Iron Man." The restaurant's bestselling salad is the Brentwood Chicken Salad. The patio has black-and-white scalloped umbrellas, and the kitchen is open daily from 10:30 a.m. to 9 p.m.
Nordstrom Local is now open at 3725 Paseo Place, Suite 1040, in front of The Log in the former West of Camden space. When the Union-Tribune announced it in April, it called this San Diego's first of the small Nordstrom service hubs and gave June 4 as the target opening date. Its July coverage described a store built around convenience, not racks of clothing. The KREWE eyewear pop-up is also open at One Paseo, but the center says it is only there for a limited time.
One Paseo is the side that got the first-of-their-kind openings this summer. Del Mar Highlands added new floors of things to do. Joe & the Juice is now on the Del Mar Highlands side of that line.
What's still behind a sign
Three openings that people expect have not happened yet, and a fourth announcement has gone quiet for a long time.
- Seabørn Cocktails. A September What Now San Diego report still had it as coming soon, with no hours posted.
- Wanderlust Creamery. It was announced in July 2025 for 12925 El Camino Real by the Pop Jet fountain, with a target of summer 2025. In July 2026 the Union-Tribune still described it as in the works, and the center's own directory still lists it as coming soon.
- J.Crew Factory. It is headed for the former Le Dimora space at The Village at Pacific Highlands Ranch. The center's listing says "Open Late Fall."
The same April Union-Tribune report covered the closing of the Panera Bread at The Village at Pacific Highlands Ranch on April 16. J.Crew Factory is the next scheduled opening for that center.
Halloween takes two days, one on each side
The split between the two centers shows up most clearly on the calendar at the end of the month. The two Halloween events fall on back-to-back days, so neither one takes attendance from the other.
- Friday, October 30, 3 to 5 p.m., One Paseo. The free Trunk or Treat is hosted with the San Diego Police Department. It includes trick-or-treating, candy giveaways, bounce houses, games and police vehicles on display, and costumes are encouraged.
- Saturday, October 31, 10 a.m., Del Mar Highlands. A free Halloween Party at the Pop Jet with Kathryn the Grape takes place downstairs at the fountain in the lower plaza, and costumes are welcome.
- Saturday, October 31, 4 to 6 p.m., Del Mar Highlands. For trick-or-treating, pick up a map at the Pop Jet fountain. It covers participating businesses and three character stations: Toy Land between Panda Express and Ralphs Fresh Fare, Superhero Headquarters at the fountain, and a K-Pop Power Zone on the outside deck of the Sky Deck above Jimbo's. Candy runs while supplies last. Anyone who RSVPs on Eventbrite is entered to win four Cinépolis tickets.
- Saturday, October 31, evening, One Paseo. One Paseo's live music series also has a date on the 31st.
Through November 11, the Harvest at the Highlands fall decorations stay up at Del Mar Highlands. There is a photo wall between Panda Express and Ralphs Fresh Fare and a Harvest Chair on the Sky Deck near Jimbo's.
The rest of the fall calendar, by side
Until the end of the month, One Paseo's events are mostly on weekends and on The Lawn. The free Hocus Pocus movie night is Saturday, October 10, from 5 to 8 p.m. Family Yoga follows on October 11, then Holiday Mini Photography Shoots on October 18. Live music is scheduled for October 10, 17, 24 and 31.
Del Mar Highlands runs its free Party at the Pop Jet series at the fountain at 10 a.m. on select Thursdays. Captain Tall Tale plays November 5, and Kathryn the Grape returns December 3, followed by two "Tis the SeaSun Holiday" editions on December 10 and 17.
So One Paseo's fall happens on weekend evenings on The Lawn, and Del Mar Highlands' happens on Thursday mornings at the fountain and at night on the decks upstairs. That covers the whole week, and the next change will be when Seabørn posts its hours on the Brewer's Deck.
